I love having great recipes that are Gluten Free! I did have a question and comment about 1 recipe though-- Old World Apple Pancakes: I am wondering if there was sugar left out of the ingredients list. There is the brown sugar that the apples cook in, but then in the description of making the batter, it says to mix flour, sugar, salt and melted butter. There is no other sugar (besides the brown) listed in the ingredients. I decided to just add 1/2c white sugar, and I am hoping that will be okay and not too sweet! Also, a note for others-- do not use a silicone muffin pan to bake! I tried that, and the batter is thin enough that you really can't pick up the silicon pan without it spilling out of the muffin cups.
